1 cup Arborio rice

Zest of 1 lemon
1/4 cup grated Parmesan
2 tbsp chopped tarragon or basil
Salt + pepper

Instructions:
In a large pan, heat olive oil and 1 tbsp butter. Sauté shallot until translucent.
Add rice, stirring until edges look translucent (~2 min).
