🐟 Main Dish: Seared Tuna with Herbed Couscous & Citrus Vinaigrette
Ingredients:
2 ahi tuna steaks (sushi-grade if you can)
Salt + pepper
1 tbsp sesame oil or olive oil
1 cup couscous
1 ¼ cup vegetable broth
1/4 cup chopped fresh herbs (parsley, mint, dill—springy and bright)
Zest of 1 orange
Juice of 1 lemon
2 tbsp olive oil
1 tsp honey
Optional: a few edible petals for garnish (keepin’ that spring magic alive)
Instructions:
Season tuna with salt and pepper. Heat oil in a skillet over high heat. Sear tuna 1–2 mins per side for rare (longer if you like it more cooked, but don’t break its spirit).
Bring broth to a boil, add couscous, cover and let steam for 5 mins. Fluff with fork, stir in herbs and orange zest.
Whisk lemon juice, olive oil, honey, salt + pepper for your vinaigrette.
Plate couscous, slice tuna thinly and fan it over the top. Drizzle with vinaigrette. Add a few edible flowers if you want that forest-fairy-meets-sea-nymph energy.
🥗 Side: Snap Pea & Radish Salad with Lemon-Mint Dressing
Fresh, crunchy, spring-in-a-bowl vibes. Toss thinly sliced radishes and halved snap peas with lemon juice, mint, a touch of olive oil, and sea salt. Bonus points for microgreens or fennel fronds.
